Halloweeeeeen

We had big plans this year to go to the Canton Corn Maze and pumpkin patch to celebrate fall.  Well they are only open on saturday nights... does that make sense to anyone?  We made the best of it and found a haunted house which turned out to be awesome!  It's the Dark Zone in Brandon.  We were in line behind about 100 people before we even got to the door of the haunted house!  Here are a few pictures:

This week we went to Richard and Meggie's and carved pumpkins!  We watched Shutter Island and ate pumpkin bread too!  It was a lot of fun! Here are a few of those pictures:

Wicked

Last weekend the women of the Walker family decided to go on a girls night out for my grandmother's 69 birthday!  We went to see Wicked in Memphis.  Even though our seats were on the very back row of the very back section, we still had a blast.  Bringing binoculars was not a bad idea!





How to Camp when there is a Fire Ban!

We went camping with our good married friends Richard and Meggie Butler a few weeks ago when there was still cool crisp air!  We planned and grocery shopped for our camping trip.  Meggie and I were really excited about roasting marshmallows over the fire.  Then, Richard dropped the news that there was a fire ban and there would, sadly, be no campfire! We made the best of it anyway!

White Chicken Chili

I got this recipe from a good family friend, Karen Ilian.  It is healthy and filling!

Ingredients:
1-3 chicken breasts, cooked or rotisserie chicken
1 onion
2 cloves garlic
1- 14 oz can chicken broth
1-2 fresh tomatoes, diced
1-2 cans rotel lime and cilantro tomatoes, keep juice
3 cans Great Northern Beans
1 Tbsp chili powder
1 tsp sea salt
pinch of pepper
fresh cilantro
8 oz block pepper jack cheese

In a large pot, sautee onion and garlic cloves about 8 minutes, until soft


Add chicken broth and Keep on medium heat.

Add 1-2 diced tomatoes and 1-2 cans of rotel lime and cilantro tomatoes.
Use juice from the cans.



Drian 3 cans of Great Northern Beans and add to the mix

Add chili powder, sea salt and pepper


Stir and add chicken
I used a mix of chicken breast and rotisserie chicken

Grate in pepper jack chees and let it melt.  Save some for topping soup.



Chop fresh cilantro and add on top!
